Fruity Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
3-1/2 cups flour
2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
3/4 tsp nutmeg
3/4 cup grated carrots
1/2 cup crushed pineapple
3/4 cup chopped marachino cherries
2 cups unpeeled zucchini, grated
1/2 cup nuts, chopped (optional)
1) Preheat oven to 350 degrees; Pam 2 bread pans and set aside.
2) Mix eggs, oil, sugar, vanilla; beat well.
3) Add sifted dry ingredients; mix well.
4) Mix in rest of ingredients and bake 350 degrees 50 minutes or until done.
5) Turn out onto cooling racks. Freezes well.
